What is Pootharekulu?
పూతరేకులుpronounced POO-tha-ray-koo-lu
Pootharekulu (పూతరేకులు, 'coated sheets') look impossible: sheets of rice starch thin enough to read through, lifted off inverted hot pots in a single practiced motion, then layered with ghee and powdered sugar or jaggery — sometimes dry fruits — and folded into delicate rectangles that dissolve on the tongue like sweet paper.
The village of Atreyapuram in the Godavari delta is the sweet's undisputed capital, where entire households practice the sheet-pulling craft (a skill with a GI tag to prove it). No Telugu wedding gift bag, festival hamper, or return-from-India suitcase is complete without a box.
